A red grape dedicated to winemaking which  is certified as an indigenous variety, with its own name and  well-defined agronomic and ampelographic characteristics

It is a historical fact that Toro wine traveled to the new world in the adventure of discovery, due to its characteristics that made it be preserved in such long journeys.


It is paradoxical that now an adventurer of the new world settles in Toro to make elegant wines from this incomparable variety.


Region

Denomination of Origin Toro


In the Duero river basin, the production area covered by the Denomination of Origin of Toro  is located to the southeast of the province of Zamora and to the southwest of the province of Valladolid.


The area dedicated to the vineyard is 8,000 hectares, of which 5,376 are registered with the Regulatory Council. As shown, it is a relatively small production area, dedicated to quality rather than quantity.

Vineyards

The Tinta de Toro variety anchors its roots in sandy, loose and well-drained soils, preserving the multiplication of the ungrafted vineyard, at an average altitude of 700 m. above sea level.  


The vineyards that contribute their fruits for the elaboration of the wines of our winery are dry (they lack irrigation), formed with goblet pruning and of low production, which results in grapes of excellent integral maturation and balance between their components that result in the notable quality of the wines to which they are destined.


To all this, it should be added that the particular extreme climate of the region with hot days and cold nights, coupled with the soils described above, result in a unique microclimate that brings finesse and elegance to its fruits.


Winemaking

Bodega Campo de Toro and its oenologist Paco Villanueva has the conviction and commitment to produce fine and elegant wines of great quality, in small, almost artisan productions. Our aim and philosophy is to preserve and enhance the fruity characteristics, balance and constitution, obtaining wines with their own character and personality given by the soils and the Tinta de Toro.


Grapes harvested by hand, selection of bunches and transport to the winery in small boxes; again selected in the winery. Slow and long fermentations with gentle macerations to extract and preserve the best that nature has given to the grape.


The wine thus obtained is deposited in French oak barrels, in which it remains for the months necessary for the wine to gain in aromatic richness, complexity and finesse. Barrel aging gives the wines elegance, refines them and communicates the flavors and aromas that harmonize the whole, gives smoothness, balance and roundness. Another rule of this winery and this oenologist is to achieve the above, but without allowing the wood to dominate and opaque the fruit elements and freshness of the wine.


Once this stage has been completed, the wine is stabilized, filtered and bottled. After a few months, you will have it in the glass and all that remains is to exclaim “¡Válgame Dios"


Pairing

"I am of the idea that each person can and should accompany the wine with whatever he or she pleases. I will only allow myself three humble recommendations


1. It is best to accompany the wine surrounded by friends and loved ones.


2. Consider that a red wine with structure and potency will opaque the soft and delicate flavors of some foods. Conversely, a mild white or rosé wine will be overshadowed by strong, spicy, and robust flavored foods.


3. Consider the above, improvise, make your own pairings and, above all, enjoy it in moderation."
